1. Remove the thick layer of fat and silverskin from the pork loin. 2. Slice the pork loin into ¼" thick slices. 3. Prepare the marinade: Combine 2 tbsp W-Sauce, 2 tbsp honey, 3 tbsp BBQ Rub, and ½ c Yuzu. 4. Marinade the pork slices for 24 hours in an air-tight container. 5. Preheat your smoker (e.g., Traeger) to the lowest possible setting, approximately 180°F. 6. Smoke the pork for at least 6 hours until it is dry and pliable.
