1. Combine the 50/50 ground turkey and chicken with a duck fat binder and season generously with an herbaceous rub. Form into four burger patties. 2. Preheat your smoker to 300°F (150°C) using oak wood. 3. Place the patties in the smoker and cook until the internal temperature reaches 160°F (71°C). 4. Remove the patties from the smoker and let them rest. 5.
