Combine the 1 lb sausage, 2 cups pancake mix, 3 cups sharp cheddar cheese, 1 block softened cream cheese, and 2 tbsp pork BBQ rub in a large bowl. Mix thoroughly until all ingredients are well combined. Form the mixture into small balls. Cook the sausage balls at 400°F (using Sweet BBQ pellets if smoking) for 15-20 minutes, or until an internal temperature of 165°F is reached.
