1. Preheat smoker to 350°F (oak or hickory works great). 2. In a large bowl, combine fajita meat, rice, broth, enchilada sauce, beans, seasoning and top with cheese. 3. Transfer mixture to a greased, smoker-safe casserole dish. 4. Place on the smoker and cook for 40–55 minutes or until melted and lightly bubbly. 5. Rest 5–10 minutes before serving.
