Smoked Butternut Squash Orzo Pasta

What you need

fl oz avocado oil

clove garlic clove

cup heavy cream

tsp salt & pepper

cup chicken stock

tsp smoked paprika
cup orzo

cup fresh spinach

tbsp olive oil

cup parmesan cheese
Instructions
Cut butternut squash in half, coat with your favorite oil (such as olive oil) and season with a garlic forward rub. Roast the squash at 300°F (on a grill or in the oven) for 20-30 minutes. While the squash is cooking, cook orzo with minced garlic, smoked paprika, and avocado oil until lightly browned (2-4 minutes). Add chicken stock (or veggie stock) and seasonings (including salt and pepper), then simmer for 5-10 minutes until the orzo is cooked. Mix in fresh spinach until wilted, then add the heavy cream and the roasted squash. Finish with fresh parmesan.View original recipe
