Season chicken with your favorite rub, I went with Blazing Star All In One and added additional Italian seasoning. Get Bullseye to 500° with Grill Grates flat side up (heat the Grates along with the grill). Sear both sides of the chicken beast till 163° and reserve for later. Drop temp down to 350-400°. In a cast iron - Add 2 tbsp of EVOO, 6 Oz of Sundried Tomatoes, 4 minced garlic cloves, and sautee for about 4 minutes. Add 3 cups of fresh spinach, cook till wilted. Add 2 cups heavy whipping cream and 1 cup of Parmesan cheese and cook for 4 min. Salt & Pepper (to taste). Add chicken beast back in and baste with sauce.
