1. Dry brine the chicken (thigh or breast) with Asado Rub for at least an hour. 2. Preheat your Traeger grill to 350°F, using Oak wood if available. 3. Cook the chicken until its internal temperature reaches 175°F. Remove from grill and let rest. 4. While the chicken rests, toast the brioche bun. 5. Assemble the sandwich: Spread avocado mayo on the toasted bun. Layer with heirloom tomatoes, the rested grilled chicken (seasoned with more Asado Rub if desired), pesto jack cheese, onion, lettuce, and dill pickle mustard.View original recipe
