1. Smoke your brisket at 250°F until it reaches an internal temperature of 175°F. 2. Wrap the brisket in a foil boat with beef tallow (or beef broth). 3. Increase the smoker temperature to 300°F and continue cooking until the brisket is tender and finished. 4. Rest the brisket in a cooler for at least 2 hours prior to chopping to allow the fat to break down. 5. Once rested, chop the brisket into small pieces. 6. In a bowl, combine 1 cup BBQ Sauce, 2 tbsp Worcestershire Sauce, 2 tbsp Mustard, 2 tbsp BBQ Sweet Rub, and 1 tbsp Hot Sauce. Adjust the quantity of sauce ingredients to your desired sauciness. 7.
