For the Kale Slaw: Combine the chopped kale, mayonnaise, juice from one lime, and chipotle puree in a bowl. Mix well. Roast your corn and remove kernels from the cob. Alternatively, use canned or frozen corn if preferred. Cut and season chicken breast with your favorite taco seasoning. Assemble your tacos with the cooked chicken, corn, and chipotle kale slaw inside taco tortillas.
