Remove the turkey from the smoker and wrap it tightly in foil with butter. Place it on a counter to finish the cooking process through carry-over heat and cool down. 4. Once cooled, place the wrapped turkey breast in the refrigerator overnight. 5. The next day, slice the turkey breast by hand or using an automatic slicer. 6. Portion the sliced turkey, keeping ⅓ for immediate consumption and freezing ⅔ using a vacuum sealer for later.
