First, prepare the brine by mixing 1 gallon of water, ½ cup of Game Over Poultry Brine, ½ cup of kosher salt, and 1 cup of brown sugar. Place the turkey breast in the brine and refrigerate overnight (at least 6 hours, or 12 hours for larger breasts). Once brined, remove the turkey and apply Texas Rib Grind generously. Set up your smoker for indirect heat at 300°F and add Mesquite Chunks for smoke flavor. Place the seasoned turkey breast on the smoker. Monitor the internal temperature with a probe thermometer. Periodically spray some 'butter' to keep the turkey moist. Continue smoking until the internal temperature reaches 160°F. Once it hits 160°F, remove the turkey breast, wrap it in foil, and let it rest on the counter. You can then slice and enjoy immediately, or cool it completely to use for sandwiches later.
