1. Season the rump roast generously with Hardcore Carnivore Cajun seasoning. 2. Preheat your smoker or grill (like a Kamado Joe) to 275°F (135°C), using Bear Mountain BBQ Chophouse wood pellets for smoke. 3. Place the seasoned roast on the grill/smoker and cook for an initial 10 minutes. 4. Continue to cook at 275°F (135°C) until the internal temperature of the roast reaches 140°F (60°C), monitoring with a meat thermometer. 5. During the last 5 minutes of cooking, and if the roast appears dry, baste it with butter. 6. Remove the roast from the heat and let it rest for a few minutes before slicing and serving.
