Remove the watermelon seeds. Place watermelon, half the sugar, lemon juice, and water in a saucepot. Bring to a boil. Reduce heat and simmer covered for 10-12 minutes. Transfer the watermelon into a food blender and blend until smooth. Place the watermelon puree back into the saucepot along and add the remaining sugar. Cook on a rolling boil for 2 minutes. Pop the jam into sterilized jars and store it in a cool, dark place.
