Prepare your pork shoulder by applying Yuzu binder and Q-Nami rub. Cook the pork at 250°F overnight, using Maple Bourbon Pecan wood pellets for flavor, until the internal temperature reaches 185°F. At 185°F IT, pull the pork from the smoker and wrap it tightly with foil, adding pineapple and mango juice to the wrap. Continue cooking until the pork is probe tender. Once tender, open up the foil wrap and transfer the pork to a pan to stop the cooking process. Shred the pork in the residual juice from the foil wrap. Add more Yuzu to taste, then serve and enjoy!
