Melt butter, add minced garlic and cook for about 1 minute. Stir in all-purpose flour and cook for another minute. Add heavy cream and low-sodium chicken broth, then simmer for 5 minutes or until slightly thickened. Season with salt and pepper to taste. Begin layering: Add a layer of the cream mixture, then thin-sliced potatoes, followed by cheese and Bird Gang seasoning. Alternate these layers until the casserole dish is about full. Cook at 400°F (200°C) for 1 hour to 1 hour 15 minutes. Let rest for 10-15 minutes before serving.
