Butterfly the chicken breast. Stuff the butterflied breast with smoked Gruyère and mozzarella. Wrap the stuffed chicken breast tightly with bacon. Season the chicken inside and out with Blazing Star BBQ Pork'N seasoning. Smoke at 350°F using Knottywood BBQ Plum/Almond wood until the chicken is cooked through (internal temperature reaches 165°F). Finish with sauce.
