1. Preheat your smoker to 275°F (this can be done in the oven as well). 2. Score the ham (optional) and season generously using oil as a binder. 3. Place the ham on the smoker and smoke until it reaches 165°F internal. 4. Wrap tightly with foil, adding a splash of apple juice or broth. 5. Return to the smoker and cook until 195–200°F and pull-apart tender. 6. Rest for 20–30 minutes, then pull the ham and toss with juices (and BBQ sauce if desired).
