Butterfly the Iberico Presa pork. Season thoroughly with Kosmos Q Classic Steak seasoning. Dry brine the pork overnight using BBQ Dripez dry brine. Cook the pork over charcoal and Bear Mountain BBQ Cherry Wood until it reaches an internal temperature (IT) of 140°F. This allows the pork to be cooked to a medium-rare doneness.
