A reverse seared tri-tip, seasoned with duck fat spray and a special BBQ rub, smoked with plum wood, and finished with a high-heat sear for a perfect crust.

Hit the tri-tip with some duck fat spray, then rub it down with BBQ rub. Smoke the tri-tip at 225°F until it reaches an internal temperature (IT) of 100°F. Once at 100°F IT, move the tri-tip to the Bullseye on RIOT mode with GrillGrates to create a crust.
