Cut butternut squash in half, coat with your favorite oil (such as olive oil) and season with a garlic forward rub. Roast the squash at 300°F (on a grill or in the oven) for 20-30 minutes. While the squash is cooking, cook orzo with minced garlic, smoked paprika, and avocado oil until lightly browned (2-4 minutes). Add chicken stock (or veggie stock) and seasonings (including salt and pepper), then simmer for 5-10 minutes until the orzo is cooked. Mix in fresh spinach until wilted, then add the heavy cream and the roasted squash. Finish with fresh parmesan.
