This recipe features tender, smoked short ribs seasoned with Bold Beef rub, then shredded and layered into low-carb tortillas with Jack cheese and homemade salsa. The quesadilla is pressed until the cheese is oozing and perfectly golden.

1. Season the short ribs generously with BBQ Rubdown Bold Beef seasoning. 2. Smoke the seasoned short ribs using Knottywood BBQ Plum/Almond Blend pellets on a Recteq 700 smoker until the internal temperature reaches 204°F. 3. Once cooked, wrap the short ribs in foil and allow them to rest. Then, shred the beef. 4. Lay out a low-carb tortilla. Layer with Jack cheese, Mom's Homemade Salsa, and the shredded short rib beef. 5. Spray a panini press with duck fat spray and place the assembled quesadilla on it. 6. Cook until the cheese is fully melted and oozing out, and the tortilla is golden and crispy. 7. Remove from the press, cut into desired pieces, and serve immediately.
