Set your grill or smoker to 350°F. Create a nice tight bacon weave. Spread your breakfast sausage evenly over the bacon weave. Season the sausage with your favorite pork rub. Add your desired fillings; in this recipe, one roll was made with blueberry muffins and another with cheesy scrambled eggs. Roll up the bacon and sausage weave tightly, then apply more pork rub to the exterior. Lay the rolled fatty on the grill seam side down and cook until an internal temperature of 150°F is reached. Glaze with BBQ sauce and continue cooking until the internal temperature reaches 160°F. Let the breakfast fatty rest for 10-15 minutes before slicing and serving.
