Blend all initial ingredients (ground brisket, eggs, milk, ground oats, 2 tbsp W Sauce, 2 tbsp ketchup, 2 tbsp dried onions, 2 tbsp Southern Belle seasoning) and form into a log. Refrigerate the log for 1-2 hours. Set your smoker to 350° using @bearmountainbbq Bold BBQ pellets. Coat the meatloaf log with a binder (e.g., @duckfatspray Wagyu Spray) then season with Southern Belle. Smoke for 30-40 minutes until the internal temperature (IT) reaches 140°. At this point, coat the meatloaf with a mixture of 2 tbsp Ketchup, 1 tbsp W Sauce, and 1 tbsp BBQ Sauce. Continue smoking until the internal temperature reaches 155°. Pull the meatloaf from the smoker and let it rest for 5 minutes before slicing and serving. Enjoy!
