Prepare the pork belly. Smoke the pork belly at 250°F for 3 hours or until its internal temperature reaches 190°F. At this point, remove the pork belly from the smoker. Sauce the pork belly generously, add more of the Grillheads Queen B Rub, and toss with ½ cup of brown sugar. Return the sauced and re-seasoned pork belly to the smoker for an additional 45-60 minutes. Once done, rest the burnt ends for 15 minutes before serving. Enjoy!
