1. **Prepare Cheese Sauce:** In a pot, melt ½ stick butter and ⅓ block Velveeta into 1 ½ cups milk. Do not add shredded cheese until Velveeta is fully melted. Once melted, stir in ½ cup Cheddar, ½ cup Smoked Gouda, and ½ cup Oaxaca Cheese until combined. Season with salt and pepper to taste. (Note: The texture may be wet and gritty during this process). 2. **Prepare Noodle Mixture:** In a separate bowl, combine the 16 oz rinsed pasta with ½ cup grated Parmesan, 1 cup of Oaxaca & Gouda Cheese Blend, 2 tablespoons of SPG Rub (or beef rub), and ¼ cup milk. 3. **Combine:** Add the prepared noodle mixture to the cheese sauce and stir well to combine everything. 4. **Bake:** Transfer the combined mixture to a half foil pan. Top with additional Cheddar cheese and BBQ Rub (pork rub works best). 5. Bake at 350°F (175°C) for 25-30 minutes. 6. **Optional Finish:** For a charred top, finish with a torch or broil in the oven for a few minutes.
